Banana Loaf
Delicious, soft and moreish, this loaf partners beautifully with our Earl Grey tea blend.
I experimented and tinkered for nearly a year perfecting this Banana Loaf recipe.
Ingredients:
4 Bananas
1tsp Baking soda
1 Egg
1/3 cup Oil
½ cup Sugar (any variety)
½ cup Wholemeal flour
1 cup Flour
1tsp Baking soda
1tsp Cinnamon
Optional
½ cup Chocolate chips, chopped nuts or coconut
Instructions:
Preheat the oven to 175degrees celsius, set on fan-bake.
Pre-line a loaf tin with baking paper and set aside for later .
In a large bowl, mash the bananas and baking soda together using a fork.
Crack the egg into a mug or small bowl and beat with a fork. Add the egg, oil and sugar to the banana mixture.
Sift all the dry ingredients into the batter and gently fold through until just combined, don't over mix. (add optional extras at this stage )
Pour the batter into the pre-lined loaf tin, and bake for 45-50 minutes.
Test your loaf is ready by inserting a skewer, if the skewer comes out clean the loaf is done.
Leave your loaf resting in the tin for 10 minutes before turning it out onto an airing rack.
