Native Citrus Inspired Bliss Balls

Makes 16 Bliss Balls

Ingredients:

  • 150g Cashew nuts

  • 1 Cup dried dates

  • 2 Tbsp coconut oil

  • 2 Limes

  • 1/2 Cup crystallised ginger

  • 1 Cup shredded coconut

  • 1/4 Cup dried kawakawa leaves

Instructions:

  1. Begin by soaking the cashew nuts and dates (in separate bowls) in boiling water and set aside. Once the water has cooled drain the water out completely.

  2. Mash the dates into a purée and blitz the cashews into a course crumb.

  3. Combine the cashews and dates together.

  4. Melt the coconut oil and add to the date/cashew mixture.

  5. Add in the zest of 2 limes and the juice of 1 lime.

  6. Chop the crystallised ginger into small pieces and mix through the mixture.

  7. Combine the shredded coconut and ground kawakawa leaves into a pan and toast them off on the heat. Continuously moving the coconut to avoid burning. When the coconut is golden brown, take off the heat and allow to cool.

  8. Returning to the cashew and date mixture, scoop a spoonful into your palm and roll into a ball. Keep rolling balls until you have used up all the mixture.

  9. Toss the balls through the coconut and kawakawa coating, covering the entire ball.

  10. Refrigerate before eating.
